Sweet Potato Gratin

Sweet Potato Gratin with Caramelized Onions

As a big fan of sweet potatoes minus the sugar, allspice, and marshmallows that they are usually subjected to, this recipe was a treat. Potatoes, caramelized onions, cream sauce... delicious! Nowadays I make it at much smaller size with a few adjustments and it's still as good as I remember. It comes together fairly quickly, I think the most annoying part is slicing the potatoes.

I just made some up and it's baking in the oven right now! I'm looking forward to it...

I used to not like sweet potatoes at all, until I realized that it was the trappings of the most common sweet potato dishes that I didn't like. Once I started eating them without any of the sweeteners or any of that I fell in love. Just give me a roasted sweet potato and let me gooooooo. I found this recipe looking for sweet potato dishes for a Thanksgiving potluck that didn't involve sugar or marshmallows, and it's been a staple of my recipe book since.
